It is indeed a P. esseriana flower. The picture represents the color exactly, should it be purple?

Yeah, nearly all of the Mexican butterworts have a pink/purple color to them.

Here's a link to A World of Pinguicula with pics of the flowers of several of the P. ehlersia forms. There's an "alba" form as well as shades from pink to purple, but none the same color as yours.
