I get a kick out of it when something like this actually works - http://www.ostrichleather.com/. But you've probably already seen the site. If you want the thrill of the hunt, the train from Flagstaff passes an ostrich farm a couple hours before reaching LA. You might hop off the train and chase down an ostrich. You'll have to figure out the rest.
