I've always been a fan of Nepenthes, but only recently started collecting them, along with some Droseras, Dionaeas, and Sarracenias that have snuck in there haha! You don't mention pinguicula, yet Mexico is home to a great many of them.
so I hope to learn more about them so I can give them what they need later on! I definitely hope to add them to my collection sometime soon!
