Cephalotus & sphagnum?

So I'm using peat/sand/perlite as my medium, my question is would it be better to use live sphagnum for top soil or nah?

No. Unless conditions favor, Cephalotus seems susceptible to crown rot. Many people use a top layer of sand for their cephs.

Right now I got the peat/sand/perlite so I might just coat the top with some sand to help keep the crowns dry. When I water sometimes drops get on them but I use a little blower to dry them up.

It's fine to get water on them, you just don't want there to be a lot of moisture constantly around the crown, unless your conditions are very dry.
