Im wondering

Is it really necessary to cut of the completely dead pitcher?

Or do we just do that to make the plant look better?

Also, what do we do about the dead leaves?

Should I cut them of or let them be?

I think it's good practice to remove dead material because dead material can harbor mold/fungus. You want to limit your invitations to such things.
 
I agree with Dave. While not 100% necessary to remove dead pitchers and leaves, it is best to do so at least occasionally. Dead matter will decay which can pose problems with fungus/bacteria as well it could restrict air flow through the lower portion of the plant etc. Plus it just looks nice to not see brown traps and leaves. Out in the greenhouse I go through flat by flat and clean them up periodically.
