Dormancy question

I clearly understand how to go about this but I was wondering if there are any alternative methods to storing these plants, in a unheated garage, without having to water them frequently?

I was thinking a long the lines of a big zip lock bag with a little water on the bottom, but am rethinking this because that might just introduce more problems than solve problems.

Any ideas?
 
Personally, I keep temperate plants outside until mid-November, or when the forecast has overnight lows below freezing. Then I use a lab fridge and place them directly in, as is, open tray, no fungicides.
