have to do... Thanks for putting such a fun pack together.

being a chef and also a Virginian... I think I can help out with this one.

2 cups all-purpose flour
1 tbs baking powder
1 tsp sugar
1/2 tsp salt
1/2 cup lard (yeah, vegatable shortening will work also)
3/4 cup buttermilk

1. preheat your oven to 450 F. Mix together all of your dry ingredients. Then cut the shortening into the flour with two knives until your mixture resembles coarse meal (don't use your hands or your biscuits will be tough and hard). Add milk; with a fork stir just until dough clings together.

2. turn onto a floured surface; knead gently 10 times. Roll to a 1/2 inch thickness and cut into 2 to 3 inch rounds. Reroll and cut trimmings into rounds. Place on an UNGREASED baking sheet (Your biscuits will burn if grease the pan --and nobody likes burnt biscuits)

bake until golden (about 12 minutes).
 
Try the hot sauce. It's the best I've ever tasted.
