when you evaporate water, you lose water and leave minerals.
so the kind of evap that you need will have to be in the "survival setup"
the pyramid form that water when evaporated hits a roof of foil or whatever, and then drips down into a collection bin.

buy a light lamp
a workshop lamp even..
something you can hang or tripod near the plants..
it gives them light, and a tad bit of heat too.
dont put it too close though, cause they may burn..
put it mainly for the light, not heat
my lights are enough to keep my terrarium warm.
i have a lizard heat lamp and a fish aquarium style light bar.
the lizard heat lamp gives good heat but its only one lamp, so you would need multiple if you dont have other source of heat.
my light bar is the one that supplies most of the heat...
i use the exo terra fogger
its splashes, so if you put it in a terrarium the water needs to be pretty deep (cause it uses at of water, 200mL a day) and it splashes so plants will get splashed if they are near it
my exo terra fogger after 10 minutes moved my humidty from 60 to 80.

there are humane traps..
i cant remember where to get one small enough for lizards..
otherwise, keep them out by putting in screen doors and screens on your windows..
that way you can open them without lizards coming in.

i have coco mulch in my terrarium.. small pieces size.. it is the backing of the terrarium..
LOTS of fungus within hours of setup.
i thought i had cleaned the stuff, but guess i didnt do it well enough.
took awhile to kill the fungus..
thats my only experience with the stuff.
its one thing for a local paper to be criticized..they cant get all their news if they dont know about it.

i would think that if your greenhouse was sitting on dirt, and you didnt have any kind of floor.. that it would make a difference.
cause the dirt is absorbing your humidty and water and heat/cold.
and then seeping it outside.
i would think that perhaps some kind of insulation/seperator would...
what about a room humidifier?
i got on from sears for around 150...
and they are about as high as your knee, and a good arms length width.. they humidify a whole house very nicely..
you could try and see if you can make the settings higher so more humidity comes out. and a greenhouse that size...
